Ganzo is the creative laboratory of APICIUS International School of Hospitality. Ganzo is a school restaurant that reinterprets Italian cuisine from an international perspective, open to the public and operated by the students and faculty of Florence University of the Arts – The American University of Florence through experiential learning. The wines featured at Ganzo represent specialty Italian wine producers who are a part of institution’s partnership with industry professionals, APICIUS FRIENDS.
Ganzo is managed by the non-profit Fondazione di Partecipazione Palazzi – Florence Association for International Education.
